Low carb baking

Here are my own low carb bread recipes. They are all grain free, without wheat flour and gluten free.

Bake low carb crisp bread/cracker bread


Crispbread - low carb (only 5% carbohydrates)



This is a delicious and healthy crispbread that contains 5 grams carbohydrates per 100 grams
I have developed the bread on the basis of an other recipe containing corn flour and different seeds. My aim was to minimize the number of carbohydrates. Since this bread contains very much flaxseed it prevents constipation. The toxin found in flax seed is inactivated by heating so you can eat the bread with peace. The bread is gluten-free, crunchy and very tasty. Because it becomes quite thick slices, you can take extra butter and cheese on. Preparation time: about 50 minutes. Enjoy!

Ingredients/recipe:
350 grams of crushed flaxseed (contains 4,5 grams carbohydrates)
100 grams almond flour (contains 13 grams carbohydrates)
100 grams Coconut Flour (contains 17 grams carbohydrates)
100 grams Psyllium husk (contains 3,5 grams carbohydrates)
1,5 tsp salt (zero carbohydrates)
110 grams of olive oil or rapeseed oil (zero carbohydrates)
9 eggs (zero carbohydrates)
30 minutes in the oven at 200 degrees celcius
Mix all dry ingredients. Pour in the eggs and the oil. Mix the dough. Divide the dough in two parts. Put each part on a baking sheet with greaseproof. Use the palm of your hand and press out the dough on the baking sheet. It's a little hard to do it. It take some skill and patience. You can put a greaseproof on top also (perhaps soft teflon) and use a rolling pin. Put the baking sheet in the oven for 30 minutes. The bread is ready when it begins to get dark brown at the edges. Take out the plate and let the bread cool. Crack the bread in pieces. Eat it with a very thick layer of butter and cheese. This is eating low carb.
Total weight of dough ingredients: 810 grams
Total content of carbohydrates: 38 grams
Content of carbohydrates per 100 grams: 5 grams






Baking Low Carb Bread (soft bread)
This recipe, I usually only done in portions of bread, it becomes a bread as the size of a muffin around. You can bake in the microwave or in the oven.
The cream can be exchanged for cream cheese or sour cream (in Swedish Kvarg or Creme fraiche) but the bread becomes a bit dense, stickier, more like scones.
If you use cream cheese, add 50 ml milk for each 100 ml cream cheese.

The basic recipe small batch
Basic recipe small batch to a round bread that can be divided in two. It is baked in the oven 200 degrees Celcius (392 Farenheit) for 21-22 minutes. If you bake it at full effect in the microwave, it takes only 3-4 minutes. You can take it out after three minutes and turn it upside down and then bake it for about 30 seconds more.
You get a bread that contains 80% less carbohydrates than ordinary toast bread or loaf.
1 dl (100 ml) coconut flour
1 dl (100 ml) almond flour
2 eggs
1 dl (100 ml) and 2 tablespoons cream
1 tablespoon, and 0.5 teaspoon of psyllium husk, Fiberhusk
1 teaspoon baking soda, (A Swedish tea spoon measure is bigger than a regular teaspoon)
1/4 milliliter pure stevia if you want a little sweeter taste

Mix all dry ingredients in a bowl. Use a whisk so that the baking powder is mixed well with the rest.

Break the eggs and pour them in the bowl and pour in the cream.
Stir with the whisk. Wait one or two minutes so the dough becomes thick.
Use a spatula or spoon to get the dough out of the bowl. Form the dough to a ball with your hands, put it on a plate and squeeze it to a muffin.
Bake in the oven 200 degrees Celcius (392 Farenheit) for 21-22 minutes or bake at full power in the microwave for 3-4 minutes. You can then take it out after three minutes and turn it upside down and then run about 1 minut more.

Recipe for larger dough
If you want to make one big loaf then just take the ingredients from the basic recipe times 4. So to make a loaf take the following:
4 dl (400 ml) coconut flour
4 dl (400 ml) almond flour
8 eggs
4 dl (400 ml) plus 8 tablespoons cream (it will be a little bit more than 500 ml)
4 tablespoons plus 2 teaspoons of psyllium husk, Fiberhusk
4 teaspoons baking soda (A Swedish tea spoon measure is bigger than a regular teaspoon)
A small pinch pure stevia if you want a little sweeter taste


Mix all dry ingredients in a bowl. Use a whisk so that the baking powder is mixed well with the rest.

Break the eggs and pour them in the bowl and pour in the cream.
Beat with the whisk. Wait 1-2 minutes so that the dough becomes thicker. At the end you must beat the whisk against the edge of the bowl to get the stuck dough loose. An elektronic Household assistant, food processor might be easy but I bake without it.
Use a spatula or spoon to get the dough out of the bowl.
Divide the dough in 4 pieces. Take one piece and form it to a ball with your hand. Put it on a plate and press the dough with your hand until you get a round cake. Bake in microwave for 3 minutes at full effect. Take it out and turn the cake upside down and run for 30 seconds more. Split it along with into two parts and allow to cool slightly. On with much butter and your favorite toppings and enjoy!

One can have your favourite bread spices in it. Maybe a little cardamom? Raisins or chopped plum?
I you want to bake low carb and avoid carbohydrates then sweet only with stevia if you want the bread a little sweet. For Stevia has zero carbohydrates and zero calories.






Recipe for low carb bread with linseeds
This is the same recipe as for low carb soft bread described above, with one adjustment: I have replaced half of the almond/ coconut flour with crushed linseeds.

0,5 dl (50 ml) almond flour
1 dl (100 ml) crushed linseeds
2 eggs
1 dl (100 ml) and 2 tablespoons cream
1 tablespoon, and 0.5 teaspoon of psyllium husk, Fiberhusk
1 teaspoon baking soda, (A Swedish tea spoon measure is bigger than a regular teaspoon)
1/4 milliliter pure stevia if you want a little sweeter taste




Recipe for a bigger batch 4 round breads
Heat the oven to 200 degrees Celcius (392 Farenheit)

If you want to make a bigger batch for 4 round breads then just take the ingredients from the basic recipe times 4. So to make 4 round breads take the following:
2 dl (200 ml) coconut flour
2 dl (200 ml) almond flour
4 dl (400 ml) crushed linseeds
8 eggs
4 dl (400 ml) plus 8 tablespoons cream (it will be a little bit more than 500 ml)
4 tablespoons plus 2 teaspoons of psyllium husk, Fiberhusk
4 teaspoons baking soda (A Swedish tea spoon measure is bigger than a regular teaspoon)
A small pinch pure stevia if you want a little sweeter taste

Use a spatula or spoon to get the dough from the bowl and divide the dough in 4 pieces. Take one piece of dough and form it to a round ball. place it on a greased pan and squeeze it to a cake.
Do the same with the other 3 pieces. and bake in 200 degrees Celcius (392 Farenheit) for 22 minutes.
Do you want raisins Chopped plum in the dough? Plums increases the carbohydrates but I love to ad them on my sandwiches under the cheese instead of marmelade.
