Low Carbohydrate High Fat - LCHF diet means a drastic reduction in the intake of carbohydrates in the diet. You exclude foods that are rich in carbohydrates and starches such as cereals, flour, bread, potatoes, corn, rice. Carbohydrates are energy and the carbs that you eat and don't burn are stored as fat in the body. Instead of rice, potatoes, pasta or fries, you can take some extra vegetables on the plate to the meat, fish, chicken or whatever you eat. The diet allows you to eat very much fat, butter, cream, mayonnaise, cheese, coconut oil etc.
If you keep this diet consistently you loose weight. But if you cheat and also eat a lot of carbohydrates, bread, and sweets it will be disaster, then you gain weight. You must be consistent. You can buy pasta made from soybeans and has only 20% carbohydrates compared to regular pasta has about 75% carbohydrates.

LCHF diet is very popular in Sweden. The diet is very healthy and it really works. It makes you healthier and you loose weight.

Resistant starch

Ok there is a lot to learn these days. I have just learned about something new called resistant starch. It's very healthy. It started when I discovered Barley. Barley contains a type of carbohydrate that does not make you fat. This type of carbohydrate/fiber is called resistant starch and resistant starch can also be obtained in regular food such as potatoes, white rice, beans etc depending on how you prepare and it these foods. To obtain resistant starch from the food, the general method is to cook the food and then let it cool down in the refrigerator for about 24 hours. Then you eat it. For many of these foods, you can re-heat it and still get resistant starch. For other foods, it seems the best way is to eat it cold. Resistant starch has a very positive impact on food digestion, colon health, the intestine and because of this it prevents and cures many diseases.
