Goodbye ice cream. Hello cream cheese, Mascarpone and Xylitol!
This has been a great delight for me this summer, I just need to share my recipe with you.
For those who love icecream and custard but wants to be healthy, this is a superb dessert.
As sweetener use Xylitol - Birch sugar, Stevia, Sukrin, dates, or honey.
Take a package of Mascarpone cheese or cream cheese. If you want you can mix it with twice as much whipped cream and stir it all together.
But only the Mascarpone cheese or cream cheese is good enough. Take 200 grams of cheese, add about 2 table spoons of Sukrin, Birch sugar or Marianne Sweetener etc.
Stir it and then you have a ready base which you can flavor the way you want.
The flavor I have been doing this summer, and that is my favourite flavor is Japan mint. Very good indeed mmm! Add very little Japan mint for the essential oil is very strong. Also add a little liquid vanilla flavor.
There you have it! Super good custard. A soft cream that is much like a kind of ice cream. It's ready to be served but you can also put it in the fridge to make real ice cream of it.
The cream on the picture above is only vanilla. You can buy the Japan mint essential oil in your health food store.
Birch sugar has 40% less calories than regular sugar and 75% less carbohydrates than regular sugar. Sukrin has zero calories. Marianne sweetener has zero calories and zero carbohydrates. The main ingredient Erythritol is the same in both Marianne sweeteners and in Sukrin.
Marianne sweeteners manufacturer claim that Erythritol is not absorbed by the body and does not affect blood sugar levels. So in food context it's allowed to say that their product contains zero carbohydrates even if in fact it has 100% carbohydrates. Yes they say that it has 100% carbohydrates but when digested it becomes zero in the body. That would then mean that also Sukrin has zero carbohydrates because Sukrin is also made of Erythritol.
Make LCHF pancakes using almond flour instead of regular white flour. Almond has 6 grams carbohydrates per 100 grams. White flour has 70 grams. Carbohydrates are converted to sugar in your body. If you don't work out, excercise, do sports ot go to the gym, try to stay low on carbohydrates.
If you do sports and work out you can eat more of of it because your body will use it and not store it. Then put some healthy low carb mascarpone custard on your pancakes. Enjoy!
Rum raisin ice cream
This is aaahhh so good! Just follow the recipe above with mascarpone or cream cheese. Then take 2 table spoons of Sukrin or Birch sugar Xylitol.
Take raisins and put them in rum flavour or real rum plus Sukrin or Birch sugar. Let the raisins soak up the flavor a few minutes. Then put them in the cream.
You can ad some rum and also a little Punch flavor either in the raisins or in the ice cream. Enjoy! You can, but you don't have to put it in the fridge. It's ready to be eaten directly.
